At the core of this machine is a double-speed fan with a humidification system on each fan position, circulating heat and moisture uniformly throughout the 54.5-litre easy-clean enamel cavity. Five adjustable steam levels plus manual control allow precise tuning of humidity for each product — achieving the balance of crust development, colour and internal softness that defines exceptional baking. The temperature range runs from 30°C to 270°C, covering everything from gentle proving to high-heat finishing.
